Matcha Cherry Chocolate Nice Cream

Simple, healthy and delicious!

I love ice cream but I’m not looking for ways to work extra sugar or dairy into my diet. So I got to thinking about Nice Cream, the one ingredient frozen treat made from bananas. Nice Cream has no extra sugar, no dairy, and no preservatives. This vegan version of ice cream seems like a great place to start.

Banana’s natural sweetness and creamy texture make the perfect base for a delicious frozen treat. Throw in some matcha, cacao, and cherries and make it a divinely decadent dessert that you won’t have to feel guilty about.

Matcha, cacao, cherries, and bananas are loaded with antioxidants, vitamins, nutrients and all have anti-inflammatory properties. Indulge yourself with this frozen confection that’s so good for you.

Tools

  • Blender
  • Rubber Spatula

Ingredients

  • 3-4 over-ripe bananas - peeled, sliced and frozen overnight.
  • 1 tsp matcha powder
  • 1 tbsp cacao powder
  • A pinch of salt
  • 8 cherries - pitted and diced

Prep

  • Place frozen bananas in blender and blend until partly smooth.
  • Add matcha powder and pinch of salt and blend until fully mixed (scraping the sides of the blender periodically)
  • Add cacao powder and blend until evenly mixed and smooth (if the mixture is too thick add a splash of coconut milk and reblend).
  • Transfer mixture into a container and mix cherries in by hand.
  • Cover and refreeze for 2 hours*
  • Scoop and enjoy!

* Can be enjoyed immediately as soft serve.
